As promised, here is the recipe for the snickerdoodles. These are probably one of my most requested items, besides Lemon Meringue Pie. The recipe comes from an awesome cookbook that my Grandma Fisher gave my mom a long time ago. That cookbook also has the recipe for mom's famous Cherry Chicken, which she makes on my dad and brother's birthday every year. Unfortunately, it's not on the diet so I won't be able to make that anytime soon.
Snickerdoodles
1 c. softened shortening
1 1/2 c. sugar
2 eggs
2 3/4 c. flour
2 tsp cream of tarter
1 tsp soda
1/2 tsp salt
2 T. sugar
2 tsp cinnamon
Set oven to 400. Mix shortening and sugar until creamy.Add eggs and mix together thoroughly. Sift flour, cream of tarter, soda, and salt together; add to preceding mixture a little at a time. Chill dough for one hour. Roll into balls size of walnuts. Roll in mixture of 2 tablespoons sugar and 2 t. cinnamon. Place about 2" apart on ungreased cookis sheet. Sprinkle more cinnamon on top of the cookies. Bake 8 to10* minutes until lightly browned but still soft.
*I found that 9 minutes works perfectly for me. The cookies are firm on the outside, but soft and chewy inside.
