As promised, here is the recipe for the snickerdoodles. These are probably one of my most requested items, besides Lemon Meringue Pie. The recipe comes from an awesome cookbook that my Grandma Fisher gave my mom a long time ago. That cookbook also has the recipe for mom's famous Cherry Chicken, which she makes on my dad and brother's birthday every year. Unfortunately, it's not on the diet so I won't be able to make that anytime soon.
Snickerdoodles
1 c. softened shortening
1 1/2 c. sugar
2 eggs
2 3/4 c. flour
2 tsp cream of tarter
1 tsp soda
1/2 tsp salt
2 T. sugar
2 tsp cinnamon
Set oven to 400. Mix shortening and sugar until creamy.Add eggs and mix together thoroughly. Sift flour, cream of tarter, soda, and salt together; add to preceding mixture a little at a time. Chill dough for one hour. Roll into balls size of walnuts. Roll in mixture of 2 tablespoons sugar and 2 t. cinnamon. Place about 2" apart on ungreased cookis sheet. Sprinkle more cinnamon on top of the cookies. Bake 8 to10* minutes until lightly browned but still soft.
*I found that 9 minutes works perfectly for me. The cookies are firm on the outside, but soft and chewy inside.
Here is a picture of the finished product!

Salsa and Snickerdoodles
Welcome to my first blog post! I've been considering starting a blog for a while now, so I went ahead and took the plunge since I'm currently on Christmas break and have loads of free time. I figure if my 90+ year old great aunt can blog, so can I.
Today, I've been doing a bit of cooking to prep for tomorrow's New Year's Eve party. I made a slightly smaller batch of the Pioneer Woman's salsa and I'm working on some delicious Snickerdoodles right now (recipe and picture coming soon). Tomorrow night's party will be the "last meal" for Austin and I before we embark on the 17 Day Diet. My parents have been on it, and according to my ever-eloquent father, "All you eat is stuff that cows and sheep eat." So it should be an interesting adventure. But the way I see it, you can do anything for 17 days, right?
